Spaghetti with vegetables

A nice recipe to present vegetables in a different and original way.
Vegetable spaghetti is quick and easy to prepare, both raw and cooked by sautéing them briefly in a pan or blanching them for a few minutes.

How do you prepare spaghetti/tagliatelle/vegetable noodles?
You can prepare vegetable spaghetti by arming yourself with patience, slicing the chosen vegetables with a mandolin and then cutting each slice with a very sharp knife. However, there are many manual tools on the market, not very expensive and rather curious that will help you in this undertaking. With these tools you can easily make strips, spirals or spaghetti in a few seconds and safely.

In this recipe we prepare a first course: "Courgette spaghetti with pea cream"
 
INGREDIENTS FOR 4 PEOPLE:
4 courgettes;
4 generous handfuls of fresh peas;
curry to taste;
parsley to taste;
oil and salt to taste
 
METHOD:
Clean the courgettes. Make spaghetti from the courgettes and blanch them in a little salted water for one or two minutes. As soon as they are ready, drain the spaghetti. Now prepare the pea cream, boil them, drain them and blend them with a drizzle of oil, a pinch of salt and a little curry. Arrange the courgette spaghetti in a nest, pour in the pea cream and garnish with oil and the remaining parsley.
