Deba Bunmei knife
From the Japanese cutlery Global, a line of typically Japanese knives, Bunmei series.
The Bunmei series knives are produced by Yoshikin and have high quality steel and a “HONKI” wooden handle. Bunmei knives are traditional Japanese knives, still widely used by Japanese chefs.
The blades are produced in special CROMOVA 18 molybdenum-vanadium steel with a hardness level of 56-58 HRC (Rockwell scale), they have a special satin finish which facilitates the detachment of food from the blade itself.
The knife with its particular Deba shape is used to mince and cleanly cut foods such as vegetables and fish.
