"Eighteenth century" pastry cutter wheel

The "eighteenth century" spur is an instrument made entirely of brass by a local craftsman.

The prototype of this particular pastry cutter wheel was born from a modern reinterpretation of an original from the 1700s, kept in a museum. The handle of the pasta cutter consists of tongs which are used to collect the freshly cooked pasta from the pan.

The particular festooned wheel has always been used by Emilian pastry makers in artisan workshops because it allows the pastry to be cut cleanly without dragging it.
