Wooden mold for edelweiss corzetti
Corzetti are a typical pasta from Eastern Ligurian cuisine made with simple ingredients.
These are small circles of about 5 cm in diameter made of thin pasta with a decoration obtained using a wooden mold which decorates the pasta in order to prepare it to better accept the seasoning.
Ligurian noble families used to serve corzetti printed with the family coat of arms.
In some parts of Genoa the corzetti are seasoned with a good meat sauce, in others, however, tradition requires them to be accompanied by a good marjoram pesto, replaced over time by basil.
