Cut tortellini

Tool for cutting puff pastry into rectangles measuring 2.5 cm (short side) x 2.8 cm (long side).

When passing the tool over the rolled out puff pastry, the latter is immediately cut into rectangles, ready to be subsequently folded with the typical filling.

The Bolognese tortellino recipe filed with the Bologna Chamber of Commerce includes the use of pork loin, an equal quantity of ham, an equal amount of Bologna mortadella, cheese, Parmigiano Reggiano, chicken eggs and nutmeg.
