Stainless steel tool with beech wood handle for cutting puff pastry into rectangles measuring 4 x 3 cm per side. Ideal for preparing filled pasta such as medium-sized tortellini with a hemmed edge (cappelletto).
Cappelletti are a type of filled pasta, traditional in Romagna and some areas of Emilia.
It is obtained by cutting the egg pasta sheet into rectangles with a hemmed edge, in the center of which the meat and cheese filling is placed; the dough is then folded first in two into a triangle, and then joining the ends around a finger of the hand.
The cappelletti are then cooked in meat broth.
