The troccolaturo is a brass rolling pin, produced by a local craftsman, with which the puff pastry is cut into thick spaghetti : the troccoli which take their name from the tool with which they are made.
The troccoli dough is based on durum wheat semolina, 00 wheat flour, water and, sometimes, even egg whites and is a pasta that requires rigorous cooking al dente and goes well with rich seasonings and rich sauces.
